Haven't made the chickpea cookies but some on the board here enjoyed them better by pureeing the chickpeas and mixing it into the batter. just to give you another option...

I just found this thread.  I made the pizzas on pita bread with spinach.  My 2.5 year old ate it all.  I don't think she has ever had spinach before and LOVES pizza.  She has turned down individual pizza things from Trader Joes (US).  My negative was that the pitas stuck to the tray.

Anyone try the deviled eggs with califlower?  I want to try that.

I do not have the time nor the patience to puree everything so I buy the baby food seconds jars. The whole jar is like 1/2 cup. But I have had the book and tried the pancakes with sweet potatoes and 1/4 tsp cinnamon - Delicious. I also did the spaghetti with broccoli and carrots those I actually did puree and Holden ate 2 bowl fulls. I just made corn muffins with 1/2 jar of butternut squash and they were a hit too. I am going to try more stuff too. We don't eat enough veggies ourselves. We try but it's hard sometimes. Holden doesn't eat them at all anymore but I still put them on his plate.

I made the deviled eggs with califlower.  My 2.5 ate them all up.  I tasted the califlower, but I don't mind it.  Need to try more recipes!

I just made the peanut butter muffins today and holy cow are they good! Also made the carrot cake muffins and those are delicious too. I had made them previously and my girls love them.

I usually only use about half the sugar she recommends. Especially since the PB muffins have jelly and the carrot cake muffins have cream cheese frosting. Who needs all that sugar?!

I made the scrambled eggs with the cauli and Lilly loved it!! the tofu nuggets, not so much, even though she at the tofu raw... and the choc chip muffins with chickpeas were a bit hit.

Will have to try the muffins Lu!

My problem is James is allergic to eggs & almost all the recipes look like baked goods with eggs. Anyone know what would be a great egg substitue??
